Two Delicious Pumpkin Recipes
Many people can agree that autumn is the time for pumpkins. Whether it’s pumpkin decorations, pumpkin drinks, or pumpkin foods – the vegetable’s time to shine tends to be during the last few months of the year. But regardless of whether it’s March or October, you’ll want to try out these delicious pumpkin recipes:
- Pumpkin quesadilla – For a unique, healthy twist on this classic Mexican dish, spread a half cup of pure pumpkin puree on an 8-inch whole wheat and top with three tablespoons of cheese. Season the cheese and pumpkin puree with chili powder and cumin. Then, fold the tortilla in half and place it on a nonstick skillet (make sure it’s lightly coated with oil) over medium heat. Leave it on the pan for a couple of minutes, turning it over once, until cheese is melted and the tortilla is golden brown. Serve on plate and add any desired toppings, such as salsa, plain yoghurt, or sour cream.
- Roasted pumpkin, sweet potato, and brown rice pilaf – To make this dish, combine two cups of cubed raw pumpkin, one medium sweet potato (peeled and cut into ½-inch cubes), and one tablespoon of olive oil in a medium bowl. Put this mixture in a baking pan and bake for 10 to 12 minutes, stir it, and continue baking for an additional 10 minutes, or until the vegetables are tender. In a separate pot, cook one cup of brown rice with vegetable broth and, once finished, combine with the vegetable mixture. This recipe should serve about eight.
