Cook the quinoa
Let 1 cup quinoa soak in two cups of water in a medium saucepan for 15 minutes
Bring the water to a boil, then reduce to a simmer

Remove the lid, fluff the quinoa with a fork, and let it come to room temperature
Steam the kale

Form your quinoa patties – you can use your hands or an ice cream scoop to create uniform-sized balls, which can be flattened into patties
Cook about 6 patties at a time, but not so many that the pan is overcrowded
Cook on each side about five minutes or until golden brown
Serve the patties
Once the patties have cooled, you can serve them with avocado slices, chopped cilantro, lemon juice, or a topping or sauce of your choosing.
