Superfood Recipe: Salmon, Kale, and Sweet Potato
Those looking for a quick and satisfying meal will want to try out this salmon, kale, and sweet potato recipe. This dish has all the ingredients of a nutritious meal. Kale, for instance, is known as a superfood that’s low in calories, high in fiber, and contains powerful antioxidants. Sweet potatoes are known for being a good source of vitamins C and A, potassium, and fiber. Lastly, salmon is a protein-rich food that contains beneficial omega 3 fatty acids. To get the health benefits of all these in a delicious and convenient dish, follow this recipe, which serves 2 people:
- Chop up 2 sweet potatoes into small cubes or strips and mix with 1 tablespoon of olive oil and a squeeze of lemon
- Rinse and chop 1 kale bunch
- Add 1 tablespoon of olive oil and a lemon squeeze to the kale as well
- Season kale, sweet potatoes, and 2 fillets of salmon with salt, pepper, and any other preferred seasonings
- Put sweet potatoes in one baking dish and the salmon and kale in another
- Preheat oven to 400 degrees
- Put sweet potatoes into heated oven
- After 5 minutes, put in the dish containing the kale and salmon
- Bake for an additional 12 to 15 minutes
- Take the dishes out and let them rest for a few minutes
- Enjoy!
